That spiral thing is called Kamaboko or Narutomaki (because of it’s whirlpool pattern). It’s essentially a fish cake.
Shin noodles, Yokohama Ramen, Hakata Ramen are straight noodles.
Spiral noodles such as Sapporo Ramen and Kitakata Ramen.
The type of noodles used for each genre of ramen is different.
